Brownie Shortcake with Berries

This is a quick and simple dessert, topped with fresh strawberries and blueberries.

Brownie Shortcake with Berries

1 (19.5 ounce) package brownie mix
1 (16 ounce) container sour cream
1 Tbsp powdered sugar
1 tsp vanilla
3 cups cut strawberries and blueberries, mixed, not each, 1 1/2 cups of each

Whipped Cream
1/2 cup heavy cream
1/2 tsp vanilla extract
2 tsp powdered sugar

  1. Preheat oven to 350F. Prepare brownie batter as directed on package; stir in 1/2 cup of sour cream. Spoon into greased and floured 9 inch round cake pan.
  2. Bake 45 minutes; cool 10 minutes. Remove from pan to wire rack, cool completely.
  3. Make your whipped cream by adding the heavy cream to a mixing bowl, whip the cream until stiff peaks are about to form, then add the vanilla and sugar until peaks form. Make sure to not over-beat because the cream may become butter like or lumpy.
  4. Add remaining sour cream, sugar and vanilla to the whipped cream, stir to combine. Cut brownie horizontally in half. Place bottom half on plate; spread with half of the whipped cream mixture. Cover with top of the brownie, spread remaining whipped cream mixture and top with the mixed berries. Store in the refrigerator.

This is a wonderful dessert and nice alternative to the traditional shortcake dessert. The chocolate brownie pairs so nicely with the fresh fruit. I made and brought this over to a friends house for dinner and they loved it, I got rave reviews. This is a simple and quick dessert, I used the brownie mix for convenience, but you could also use your favorite brownie recipe as a substitute. Enjoy!

Apple Sour Cream Muffins

Apple Sour Cream Muffins, these muffins are wonderfully flavorful and moist.

Apple Sour Cream Muffins

1 3/4 cup all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/2 tsp ground allspice
1/2 tsp nutmeg (freshly grated, if possible)
2 eggs
1 1/2 cups packed light brown sugar
1/2 stick unsalted butter, melted
1 cup sour cream
2 small apples, peeled & diced

Streusel Topping:
2 Tbsp brown sugar
1 1/2 Tbsp unsalted butter, softened a bit
1 Tbsp flour
1/4 tsp each cinnamon, allspice, & nutmeg

  1. Preheat oven to 400F. Line or grease well 1 or 2 muffin tins.
  2. Stir together dry ingredients and set aside.
  3. Whisk the eggs and brown sugar together before adding the butter.  Stir in the sour cream.
  4. Fold in the dry ingredients, then stir in apple pieces.  Be careful not to over-mix!
  5. Spoon the batter into the muffin cups so that each cup is three-quarters full.
  6. Combine the streusel ingredients in a small bowl, mixing with your fingers to break up the butter into small bits. Sprinkle a generous amount of streusel on top of each muffin before baking.
  7. Bake in preheated 400F oven for 18-20 minutes. Cool on a rack before removing the muffins.
  8. Enjoy warm or store in an airtight container (though I’d recommend refrigerating these after a day).

I got this recipe from Blue Jean Gourmet and I can’t say enough good things about this muffin recipe. These muffins were so delicious and moist. I got 20 muffins out of this recipe and I could not stop eating them. I used Gala apples for this recipe and the apples were cooked perfectly inside of these muffins. The muffins were light and fluffy and made the whole house smell so good, from the spices and apples used in this muffin.
