Peanut Butter Banana Chocolate Chip Muffins


Finally!!   A muffin with all three flavors: peanut butter, chocolate chip AND banana…   Whooo hooo.
This muffin gets it sweetness from the bananas,  chocolate chips and honey.  Such a delightfully light muffin, moist and delicious.
Preheat oven to 350 F degrees and line 12 muffin cup pan with paper.

 Ingredients
1 cup whole wheat pastry flour
1 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/4 cup butter melted
1/2 cup honey
1/2 cup peanut butter (I like chunky)
2 large bananas smashed
2 eggs
1 tsp vanilla
1 cup sour cream
generous 1/2 cup chocolate chips

 

Mix in large bowl flours, baking soda, baking powder, and cinnamon.   Add chocolate chips and set aside. 
In a small bowl put melted  butter and mix with peanut butter until well blended.  Add honey, sour cream, eggs,  bananas and vanilla.
Place in muffin cups and bake for 18 to 20 minutes.

……..and there you go:  quick, easy and delicious!!

Banana Toast

This snack is one of my all time favorites…Delicious!

Banana Toast

Ingredients:
2 slices of bread
peanut butter
1 banana, sliced at an angle
cinnamon
honey (optional)

Directions:

  1. Preheat oven to 425F.
  2. Spread peanut butter on one side of each slice of bread.
  3. Top with slices of banana. Sprinkle each slice of bread with cinnamon and if desired drizzle with honey.
  4. Place prepared slices of bread on a baking sheet and bake in a preheated 425F oven for 5 – 8 minutes. Remove from oven and serve.

I make my banana toast with Ezekiel Bread and drizzle with Raw Honey, the banana’s are cooked perfectly and not too mushy. This is one snack that is hearty and can be quickly made.

Chocolate Chip-Peanut Butter-Oatmeal Cookies

Why decide on one cookie when you can have three flavors rolled into one!!!  My friends love these cookies, and I’m sure you will too.
Preheat oven to 350F degrees

1 cup flour
1 tsp baking soda
1/4 tsp salt
1/2 cup butter  (1 stick)
1/2 cup peanut butter
1/2 cup white sugar
1/3 cup brown sugar
1/2 tsp vanilla
1 egg
1/2 cup rolled oats
1 generous cup chocolate chips
In medium bowl, whisk together flour, baking soda, salt and set aside.
Cream together butter, peanut butter, sugar, brown sugar and vanilla till light and creamy–about 3 minutes.    And egg and beat to combine.
Gradually add the flour mixture on low speed untill combined well.  Stir in the oats and chocolate chips.
Using 1/4 cup scoop, leveled and drop onto cookie sheet about 2 inches apart. Bake for 10 – 12 minutes until lightly browned.      ENJOY!!!!
