Guacamole


We all love guacamole.  Especially with fresh lime and cilantro.  Easy and quick to make.  I use it on sandwiches as well as alone.

INGREDIENTS
2 ripe avocados
1/2 diced sweet onion
1 lime
2 Tabl chopped cilantro
2 plum tomatoes chopped
1 clove garlic
salt and pepper
dash of tobasco (more per your own personal taste)

Peel avocados and mash with garlic. lime juice, and garlic.  Add tomatoes and onion and tobasco.  Stir in cilantro  and salt and pepper to taste.  Thats it!!!

Tropical Avocado Smoothie

Tropical Avocado Smoothie, Super creamy, full of fiber, and loaded with so many health benefits!

Tropical Avocado Smoothie

Ingredients:
2 cups milk
1 large ripe avocado
2 tsp agave nectar
1 cup frozen tropical fruit (I used a combo of pineapple and mango)
1 scoop of Protein Powder (optional)
shredded coconut (optional)

Directions:

  1. Pour 2 cups of milk into a blender.
  2. Remove avocado from skin and remove the pit. Cut the avocado into large chunks and add to blender.
  3. Add agave nectar, desired frozen fruit and scoop of protein powder; if desired. Blend for 20 seconds.
  4. Pour into glasses and top with shredded coconut; if desired.

This smoothie is like an avocado milkshake…it has a wonderful smooth and creamy texture. I personally use Jay Robb protein powders, I use either the egg white or whey protein. I don’t like protein powders loaded down with junk you can’t even read and I like that the Jay Robb powders use natural ingredients and use stevia to sweeten their protein powders. I have tried other healthy protein powders as well but the Jay Robb brand tastes the best to me thus far. In this smoothie I used the Jay Robb Pina Colada Whey Protein Powder to add an extra tropical flavor but feel free to use whatever flavor you want. This smoothie would also be equally delicious with out the added protein powder if you don’t want to use protein powder.

Hopefully the avocado in this smoothie doesn’t weird you out, It really does taste good and the avocado does not dominate the smoothie, it really has a more tropical fruit taste with the added creaminess of the avocado.

Avocado Bread

Avocado Bread, a Sweet, Dense and Moist bread.

Avocado Bread

Ingredients:
2 cups all-purpose flour
3/4 cup sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp all-spice
1 avocado, mashed (I use Haas avocados)
1 large egg
1/2 cup buttermilk
1 Tbsp orange zest

Directions:

  1. Preheat the oven to 375F. Generously grease a 9 x 5-inch loaf pan.
  2. Combine the flour, sugar, baking powder, baking soda, salt, cinnamon and all-spice in a large mixing bowl. Whisk to blend thoroughly.
  3. Remove the avocado from the skin and remove pit, place avocado in a separate bowl, and mash the avocado. Beat together the egg and avocado. Stir in the buttermilk and orange zest.
  4. Add to the dry ingredients and blend well. Pour into the prepared pan and bake for 50 minutes to 1 hour or until a wooden pick inserted in the center comes out clean.

This is a great sweet breakfast bread, it is very similar to banana bread. It has a wonderful flavor and you would never know it was made with an avocado. I thought the addition of the orange zest would add a fresh flavor to the bread and it does and I also love seeing the little orange color pop in the bread. I know the thought of eating avocado bread sounds weird but it is a moist and delicious quick bread. Give it a try!

Salad with Avocado and Strawberries

This Romaine and Baby Spinach Salad with Avocado, Strawberries and Turkey Bacon is so flavorful and beautiful.

Salad with Avocado and Strawberries

Ingredients:
2 slices of turkey bacon, chopped
baby spinach
romaine lettuce
1/2 of an avocado, cubed
strawberries, sliced
feta cheese, crumbled

Directions:

  1. Saute chopped turkey bacon in a pan until desired crispness, drain on paper towel.
  2. Add desired amount of Romaine lettuce and Baby Spinach leaves to a bowl.
  3. Add cubed avocado and sliced strawberries to greens.
  4. Sprinkle on crumbled feta cheese and drained turkey bacon. Toss with desired dressing.

This salad is a beautiful salad to look at and a delicious and refreshing salad to eat. The combinations in this salad are fantastic, the saltiness and crisp texture of the turkey bacon with the sweetness of the strawberries, paired with the salty flavor of the feta cheese, then the wonderfully creamy avocado added in the mix. I didn’t add a dressing because I mixed it all together and the avocado lightly coated the greens and the juice from the strawberries made a perfect dressing for me. Enjoy this salad and make it your own!

TAT Sandwich

Turkey Avocado & Tomato (TAT)…a little messy but worth it!

Turkey Avocado & Tomato (TAT) Sandwich

Ingredients:
2 slices of bread
mayonnaise
2 slices of cheese
2 slices of turkey
tomato slices
avocado slices
dill weed

Directions:

I slightly toasted two slices of Alvarado Street Bakery’s Sprouted Rye Seed bread and lightly spread organic mayonnaise on each slice. I then topped each slice of bread with one slice of Colby Jack cheese and one slice of smoked turkey breast. I added sliced tomatoes and avocado. Then sprinkled dill weed and Herbamare on top. You could put both slices together for the sandwich or eat open-faced.

I put together some of my favorites for sandwiches and made this sandwich, it is so good and refreshing, it is messy but I love the flavor of the dill on the sandwich. Try it and you may just love it, I say:)
